About the job
At Hilton Dubai Palm Jumeirah, A Head Sushi Chef must combine a thorough knowledge of Japanese kitchen with the ability to train and manage the Sushi man under his supervision, select the correct ingredients, collaborate to design a successful menu and presentation of the dishes applying his knowledge. In addition to the skills of a sushi man must also possess managerial and creative skills and the responsibility for keeping the kitchen health & safety. Ensure the right quality of supplies and supervise the correct inventory of products.

What will I be doing?

As a Head Sushi Chef, you are responsible for operating the Japanese / Sushi section of the kitchen to deliver an excellent Guest and Member experience. A Head Sushi Chef will also be required to plan production and develop seasonal offerings based on the Japanese menu. Specifically, you will be responsible for performing the following tasks to the highest standards:

Operate the sushi section of the kitchen
Ensure consistency in quality of dishes at all times
Supervise and coordinate all preparation and presentation in section
Plan production to facilitate daily requirements
Develop appropriate seasonal menu offerings
Manage food cost controls to contribute to Food and Beverage revenue
